Avocado Cacao Mousse

I live in an area of California that is home to over 40 varieties of avocado. Every year in the Fall we have an Avocado Festival. One of the dishes that I enjoyed making when I was primarily raw vegan was this delicious dessert. It’s simple, tasty and I’ll put it up against most any regular chocolate pudding out there.

This raw, vegan dessert is easy to make and will fool just about everyone. They'll never believe you made it with avocado. You can experiment with different varieties of avocado as well as try different sweeteners.

Ingredients
  • 4 extremely ripe avocados, peeled and seeded. Cut out any obviously bad, brown spots.
  • ½ cup good quality Cacao powder. Not Cocoa powder.
  • ½ cup Grade A Maple Syrup
  • pinch of Sea Salt
  • 1 t. Vanilla
Instructions
  1. Place the peeled avocado into a Cuisinart or Vitamix. You'll want to have the strongest blade and engine possible to make this as creamy as you can.
  2. Add in the Maple syrup, Vanilla, Salt and the Cacao
  3. Blend until creamy.
  4. Adjust the sweetness if you wish.
  5. Refrigerate and scoop out using an ice cream scoop onto a plate that you have drizzled some maple syrup and sprinkled some cacao onto as a garnish. Two balls per person

Variations

Use Coconut Nectar instead of Maple Syrup
Use a Dark Cacao if you can find it - it's a treat
1/4 cup of fresh Tangerine juice turns this into Mandarin Avocado Pudding
