I have written about this amazing salad in the page (see original post here) and tend to have it often. We had friends over for dinner, so I decided to turn up the presentation value of the salad, which I normally prepare in the kitchen and make a show of it. In the images you can see the Kelp Salad undressed, it’s beautiful to look at, I wish that the creme sauce didn’t cover the vegetables, but that’s how it goes – which is why creating it in front of your guests is so powerful visually. Assemble the bowls with the sauce garnished with sesame oil, the prepared vegetables (radishes, thin shavings of carrot, yellow beet, cherry tomatoes, and Persian cucumbers), and a dish of julienned red leaf lettuce to use as a base. So the process is to have everything on the table, then assemble, dress the noodles, add and toss the vegetables and serve atop the red leaf lettuce.
