I buy these large rolls of Parchment paper as I use it all the time. This is perfect underneath a bunch of carrots that you want to roast off for dinner. They can be substituted for Silpat sheets as well. Another thing that this parchment is great for is turning into small pastry tubes, when you have a sauce garnish that you want to drizzle onto a dish. You can easily tear off a sheet, roll it into a cone, snip off the tip and fill the cone with a coulis, then pipe it onto the dish. Then throw it away when you are done.
